Ingredients:

  • 2 lbs sirloin steak, cut into bite-sized cubes
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil

Prep:

  • Cut steak into even bite-sized cubes
  • Pat dry VERY well (this is key for searing)
  • Season with salt, pepper, and paprika

Instructions:

  1. Heat olive oil in a large skillet over high heat until very hot (almost smoking)
  2. Add steak in a single layer DO NOT overcrowd — cook in batches if needed
  3. Sear for 2–3 minutes per side without moving — This builds that crispy crust
  4. Remove steak from pan and set aside
  5. Lower heat to medium and add butter
  6. Once melted, add garlic and cook for 20–30 seconds Do NOT burn the garlic
  7. Return steak to skillet and toss in garlic butter

  9. Remove from heat immediately
  10. Garnish with parsley and serve hot
