Ingredients
  

  • 1.5 lb beef chunks brisket or chuck roast
  • 2 tbsp oil
  • 1/2 onion diced
  • 2 carrots sliced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 cloves garlic minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • Optional garnish: parsley

Method
 

Prep
  1. Cut beef into chunks if needed
  2. Dice onion
  3. Slice carrots
  4. Mince garlic
Instructions
  1. Heat oil in a large pot over medium-high heat.
  2. Sear beef until browned on all sides. Remove and set aside.
  3. Add onion and garlic and cook until softened.
  4. Pour in red wine and simmer for about 5 minutes to reduce slightly.
  5. Add beef broth, carrots, thyme, salt, and pepper.
  6. Return beef to the pot.
  7. Cover and simmer on low for 60–90 minutes until beef is tender.
  8. Taste and adjust seasoning if needed.
  9. Serve hot with bread or mashed potatoes.

Notes

  • The longer it simmers, the more tender the beef becomes.
  • Use a dry red wine for the best flavor.
  • Great for meal prep and tastes even better the next day.
  • Add potatoes or mushrooms for an even heartier meal.
