Ingredients
  

  • 1/2 lb spicy breakfast sausage
  • 1 cup shredded pepper jack cheese
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp garlic butter per quesadilla
  • Optional: sliced jalapeños
  • Optional garnish: fresh cilantro
  • Optional for serving: salsa sour cream, guacamole, chipotle crema

Method
 

Prep
  1. Cook and crumble sausage
  2. Shred cheese if needed
  3. Prepare toppings and garnishes
Instructions
  1. Heat a skillet over medium heat.
  2. Cook sausage until browned and fully cooked. Drain excess grease if needed.
  3. Spread garlic butter lightly onto one side of each tortilla.
  4. Place tortilla butter-side down into skillet.
  5. Add pepper jack cheese, cheddar cheese, sausage, and optional jalapeños to one half of tortilla.
  6. Fold tortilla in half.
  7. Cook 2–3 minutes per side until deeply golden and crispy and the cheese is fully melted.
  8. Remove from skillet and let rest 1 minute before slicing.
  9. Garnish with cilantro and serve with salsa, sour cream, guacamole, or chipotle crema.

Notes

  • Pepper jack adds extra flavor and heat.
  • Garlic butter gives the tortillas a restaurant-style finish.
  • Add hot honey for a sweet-and-spicy twist.
