Prep
- Cook and crumble sausage
- Shred cheese if needed
- Prepare toppings and garnishes
Instructions
- Heat a skillet over medium heat.
- Cook sausage until browned and fully cooked. Drain excess grease if needed.
- Spread garlic butter lightly onto one side of each tortilla.
- Place tortilla butter-side down into skillet.
- Add pepper jack cheese, cheddar cheese, sausage, and optional jalapeños to one half of tortilla.
- Fold tortilla in half.
- Cook 2–3 minutes per side until deeply golden and crispy and the cheese is fully melted.
- Remove from skillet and let rest 1 minute before slicing.
- Garnish with cilantro and serve with salsa, sour cream, guacamole, or chipotle crema.
Notes
- Pepper jack adds extra flavor and heat.
- Garlic butter gives the tortillas a restaurant-style finish.
- Add hot honey for a sweet-and-spicy twist.
