Prep:
- Slice cucumbers into thin rounds about 1/8-inch thick for the best crunch and flavor coating.
- Roll lime firmly on the counter before cutting to release extra juice.
- Pat cucumber slices lightly with paper towels if you want an even crunchier texture.
Instructions:
- Add sliced cucumbers to a large mixing bowl.
- Drizzle with fresh lime juice and olive oil.
- Sprinkle in chili powder, garlic powder, smoked paprika, salt, and black pepper.
- Toss thoroughly until every cucumber slice is evenly coated.
- Taste as you go and adjust seasoning if needed. Add more lime for brightness, more salt for flavor, or extra chili powder/Tajín for more kick.
- Let the cucumbers sit for 5–10 minutes before serving so they absorb the seasoning.
- Garnish with cilantro, red onion, or extra Tajín if desired. Serve cold.
Notes
- English cucumbers work especially well because they stay crisp and have fewer seeds.
- Don’t skip tasting as you go — cucumbers need enough lime and salt to really shine.
- For extra cold crunch, refrigerate cucumbers before slicing.
- If you love bold flavor, finish with a light sprinkle of Tajín right before serving.
