Prep
- Season chicken with salt and pepper
- Juice 1 lime into a bowl
- Slice the second lime for garnish
- Mince garlic and grate ginger
Instructions
- Heat oil in a skillet over medium-high heat
- Sear chicken until golden on both sides, then remove
- Add garlic and ginger to the pan and cook until fragrant
- Pour in coconut milk and lime juice
- Simmer sauce for 3–4 minutes
- Return chicken to skillet and cook through
- Garnish with lime slices and cilantro before serving
Notes
- Chicken thighs also work great in this recipe
- Add red pepper flakes if you want heat
- Do not boil the coconut milk aggressively or the sauce can separate
- Fresh lime juice tastes much better than bottled here
