Coconut Lime Chicken

This Coconut Lime Chicken is creamy, fresh, and packed with flavor while still being simple enough for a weeknight dinner. The coconut milk and lime combination creates an easy sauce that tastes rich but balanced.

Ingredients
  

  • 2 chicken breasts
  • 1 tbsp oil
  • 1 can coconut milk
  • 2 limes
  • 2 cloves garlic
  • 1 tsp grated ginger
  • Salt and pepper
  • Optional garnish: chopped cilantro

Equipment

  • Large skillet or sauté pan
  • Chef's knife
  • Cutting Board
  • Lime squeezer
  • Measuring spoons

Method
 

Prep
  1. Season chicken with salt and pepper
  2. Juice 1 lime into a bowl
  3. Slice the second lime for garnish
  4. Mince garlic and grate ginger
Instructions
  1. Heat oil in a skillet over medium-high heat
  2. Sear chicken until golden on both sides, then remove
  3. Add garlic and ginger to the pan and cook until fragrant
  4. Pour in coconut milk and lime juice
  5. Simmer sauce for 3–4 minutes
  6. Return chicken to skillet and cook through
  7. Garnish with lime slices and cilantro before serving

Notes

  • Chicken thighs also work great in this recipe
  • Add red pepper flakes if you want heat
  • Do not boil the coconut milk aggressively or the sauce can separate
  • Fresh lime juice tastes much better than bottled here
