Prep
- Cook pasta until al dente and reserve 1/2 cup pasta water
- Pat shrimp dry and season with Cajun seasoning
- Mince garlic
- Grate fresh parmesan cheese
- Chop parsley if using garnish
Instructions
- Bring salted water to a boil and cook pasta until al dente. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add shrimp in a single layer and cook 1–2 minutes per side until pink. Remove and set aside.
- Lower heat slightly and add garlic. Cook 30 seconds until fragrant.
- Stir in heavy cream, smoked paprika, black pepper, and red pepper flakes.
- Simmer 2–3 minutes until slightly thickened.
- Add parmesan cheese slowly while stirring until smooth and creamy.
- Return shrimp to skillet and toss in sauce.
- Add cooked pasta and a splash of reserved pasta water if needed to loosen sauce.
- Toss everything together until coated and creamy.
- Garnish with parsley, extra parmesan, and lime wedge if desired.
Notes
- Freshly grated parmesan melts smoother than pre-shredded cheese.
- Add sliced smoked sausage for extra Cajun flavor.
- Do not overcook shrimp or they can turn rubbery.
- Pasta water helps create a silky restaurant-style sauce.
