Prep:
- Cook pasta according to package instructions and drain
- Slice chicken into even strips
- Mince garlic
- Season chicken with salt, pepper, and Italian seasoning
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits.
- Add heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese until melted and smooth.
- Add cooked pasta and chicken back into the pan.
- Toss everything together until well coated in the sauce.
- Simmer for 2–3 minutes until the sauce thickens.
- Garnish with parsley and serve hot.
Notes
- Penne, fettuccine, or rotini all work great
- Add spinach or broccoli for an easy variation
- Fresh parmesan gives the smoothest sauce
- Pound chicken evenly so it cooks fast and stays tender
