Garlic Parmesan Crusted Cod

Ingredients
  

  • 4 cod fillets
  • 1/2 cup parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp butter
  • 2 garlic cloves minced
  • Salt and pepper to taste

Method
 

Prep
  1. Preheat oven to 400°F
  2. Pat cod fillets dry
  3. Mince garlic
  4. Mix parmesan and breadcrumbs together in a bowl
  5. Melt butter and stir in garlic
Instructions
  1. Place cod fillets into a lightly greased baking dish.
  2. Melt butter and mix with minced garlic.
  3. Pour garlic butter evenly over the cod fillets.
  4. Sprinkle parmesan breadcrumb mixture evenly over the top of the fish.
  5. Season lightly with salt and pepper.
  6. Bake at 400°F for 12–15 minutes or until cod flakes easily with a fork and topping is golden brown.
  7. Serve immediately while hot and crispy.

Notes

  • Fresh cod or thawed frozen cod both work well.
  • Do not overcook or the fish can dry out.
  • Add parsley or lemon zest for extra freshness.
  • Panko breadcrumbs make the topping even crispier.
  • Great for meal prep and reheats surprisingly well.
