- Preheat oven to 400°F
- Pat cod fillets dry
- Mince garlic
- Mix parmesan and breadcrumbs together in a bowl
- Melt butter and stir in garlic
Instructions
- Place cod fillets into a lightly greased baking dish.
- Melt butter and mix with minced garlic.
- Pour garlic butter evenly over the cod fillets.
- Sprinkle parmesan breadcrumb mixture evenly over the top of the fish.
- Season lightly with salt and pepper.
- Bake at 400°F for 12–15 minutes or until cod flakes easily with a fork and topping is golden brown.
- Serve immediately while hot and crispy.
Notes
- Fresh cod or thawed frozen cod both work well.
- Do not overcook or the fish can dry out.
- Add parsley or lemon zest for extra freshness.
- Panko breadcrumbs make the topping even crispier.
- Great for meal prep and reheats surprisingly well.
