Layered Beef Tortilla “Lasagna”

A cheesy, layered beef tortilla bake packed with bold Tex-Mex flavor. This easy, crowd-pleasing dish stacks tortillas, seasoned beef, beans, and melted cheese into a lasagna-style comfort meal perfect for weeknights or game day.

Ingredients
  

  • 1 lb ground beef
  • 6 –8 corn tortillas
  • 1 can refried beans
  • 1 1/2 cups shredded cheese cheddar or Mexican blend
  • 1/2 onion diced
  • 1 tbsp taco seasoning
  • 1/2 cup salsa
  • 1 tbsp oil
  • Optional: black beans and corn
  • Optional garnish: sour cream, green onion

Equipment

  • Large skillet
  • 9x13 Baking dish
  • Mixing spoon
  • Knife
  • Cutting Board

Method
 

Prep:
  1. Preheat oven to 375°F
  2. Dice onion
  3. Warm tortillas slightly (so they don’t tear)
Instructions:
  1. Heat oil in a large skillet over medium heat
  2. Add ground beef and cook until browned
  3. Add diced onion and cook 2–3 minutes
  4. Stir in taco seasoning and a splash of water, simmer 2 minutes
  5. Lightly grease baking dish
  6. Spread a thin layer of beans on bottom
  7. Add tortillas to form first layer
  8. Add beans → beef → salsa → cheese
  9. Repeat layers (tortillas → beans → beef → salsa → cheese)
  10. Finish with a top layer of cheese
  11. Bake 25–30 minutes until hot and bubbly
  12. Let rest 5 minutes, slice, and serve

Notes

  • Fresh is better, but canned veggies a faster option
  • Add jalapeños for heat
  • Black beans or corn make great add-ins
  • Cut into squares like lasagna for clean serving
